Cheeeeeeeeeezy Chicken Kofta sticks………………………….Yummmmmmmmmmmy!!!!!
The name itself brings water to my mouth. This is my family’s and mine best tea time snack. Winter, summer or rains….this snack tastes better in any weather and at any time of the day.
It is simple to make, and can be stored in freezer for couple of days.
Ingredients:
- 1/4 Kg minced chicken meat
- 1 & 1/2 tea spoon Ginger Garlic paste
- 1 tea spoon coriander powder
- 1/2 tea spoon turmeric
- 1/2 tea spoon cumin powder
- 1/2 tea spoon red chili powder ( alternatively you can use 2-3 finely chopped green chilies)
- 1 tea spoon salt (or as per taste)
- mint (finely chopped)
- green coriander leaves (finely chopped)
- 1 finely chopped onions (optional)
- 1/2 tea spoon garam masala (optional)
- 3-4 bed slices (optional)
- small cheese cubes
Process to Make it:
- Preparation of minced meat
- Take the chicken meat in a mixing bowl. Make sure all water has drained out.
- Add Ginger garlic paste, coriander, turmeric, cumin, chilli, salt and other powder masalas to the minced meat.
- Add finely chopped onions, coriander, mint to the minced meat
- Add 2-3 bread slices to dry out any water and to give a slight crispy texture to the kofta
- Mix it well, cover the bowl and let it rest for 15 minutes.
- Preparation of stick
- Take an ice cream stick, and add a cheese cube at the top of the stick
- Make an oval shaped kofta covering the cheese cube and 1/2 of the stick
- Make sure the kofta is not falling apart and should stick together to the stick
- let it rest for another 5-10 minutes
- Frying the kofta stick
- Take a karahi and add cooking oil to it. We need to do a shallow fry and not deep fry
- Heat the oil and keep the stove on medium flame
- Place the sticks in the oil karahi and let it cook for 5-7 minutes on each side
- Don’t over heat the kofta else it will become too dry
- Please make sure you get an even dark brown (not black) color around the kofta.
- Take out the kofta and garnish it with coriander leaves
- Chutney
- This is optional and the kofta goes with any type of chutney
- Green chutney – In a mixer take curd, coriander leaves, mint leaves, green chilli, cumin, 1-2 cloves of garlic and mix it well.
- Spicy mayonnaise chtutney – take a small bowl, add some mayonnaiase to it, then add 2 tea spoon of schezwan chutney, squeeze in 1/2 – 1 lime and mix it well.
- This is optional and the kofta goes with any type of chutney
So your hot cheezy kofta sticks are ready with your favorite chutney.
Serve it hot with kofta sticks in one hand and hot tea in another hand.
