Chicken Sutriya – A special Ramzan delicacy

As Ramzan is around the corner, we are all eagerly waiting to munch on mouth watering delicacies and one of them being Sutriya.

Sutriya is a south Indian dish popular within the Muslim community. It is a one pot dish easy to cook and liked be kids and people of all ages. Sutriya is a a rice pasta cooked in a spicy chicken or mutton soup like gravy.

Ingredients:

  • Rice floor 2 cup
  • Chicken (Preferred boneless small cubes) – 250 gms
  • Onions (2 – 3 chopped onions)
  • Tomato ( 2 – 3 and make a puree of it)
  • Ginger Garlic Paste ( 2 teaspoon)
  • Green Chilies ( 2 -3)
  • Coriander leaves
  • Mint leaves
  • 1 Lemon
  • Curd (50 gm)
  • Turmeric ( 1 tea spoon)
  • Chili Powder ( 1 teaspoon regular chili, 1 teaspoon Kashmiri chili for color)
  • Coriander Powder ( 2 teaspoon)
  • Zeera Powder (1 teaspoon)
  • Garam Masala ( 2 teaspoon) or alternatively you can add whole spices (4 cloves, 1 cinnamon, 2 small cardamom, 1 big cardamom, etc.)
  • Salt to taste
  • Oil – 1 cup

The dish is cooked in 3 main steps.

  1. Preparation of Rice Pasta
    • take 2 cups of rice floor in a large bowl
    • Add 1 tea spoon of salt to the rice floor
    • Add 2 cups of hot water to the rice floor
    • let it cool down for sometime
    • Make a fine dough of the rice floor
    • slowly add additional warm water as needed
    • Once the dough is ready, cover it up nicely and let it rest for 10 – 15 minutes
    • Apply some oil on your left palm and make small balls out of the dough
    • Make the balls in a cylindrical shape, and with the thump apply some pressure in the center of the cylindrical and make a boat like shape.
    • let the pasta rest on a plate
  2. Preparation of Curry
    • Take a big pan and add oil to it.
    • Add chopped onions and fry till it turns light brown
    • Add ginger garlic paste and fry for another 2-3 minutes
    • Add chicken pieces to it and let it fry for another 5 minutes on high flame
    • Add turmeric and red chilli powder
    • Add tomoato puree and let it cook for another 10 minutes
    • Add coriander powder
    • Add Garam Masala
    • Add green chilli and let it cook for another 5 minutes, and wait till you see oil getting separated from tomato
    • lower the flame and add whisked curd to the gravy and stir it for 2-3 minutes
    • Increase the flame to medium
    • Add water to the gravy and let it cook for another 10 minutes. Make the gravy little soupy so we can enjoy with pasta.
    • Squeeze in half lemon
    • Add mint and coriander leaves and let it cook on medium flame
  3. Cooking Pasta with Curry
    • Add the Pasta slowly to the gravy and let it boil for 5 – 8 minutes
    • Slowly turn the pasta upside down and let it boil for another 5 – 8 minutes

Soupy, Spicy, Hot and yummy Sutriya is ready to serve in a bowl.
